John Abbott’s Chicken Kashmiri

Marinade the Following for Several Hours:

  • 1.5 lb Chicken
  • 1 Tsp Tumeric Powder
  • 2 Tbsp Lemon Juice


  • 3 Tbsp Butter
  • 1 Large Sweet Onion
  • 3 Tbsp Ginger Paste
  • 3 Cloves Garlic
  • 1 Tsp Chili Powder
  • 2 Tsp Coriander Powder
  • 1 Tsp Garam Masala
  • 3 Tbsp Cashew Paste or Cashew Butter
  • 1 Can Diced Tomato with Green Chilies
  • 1/4 Cup Tomato Paste
  • 3 Tbsp Honey
  • 2 Cans Geisha Coconut Milk
  • 1 Tsp Salt

Saute the onions in butter until they are soft and yellow.  Add chicken and cook until nearly done.  Clear an area in the middle and add spices.  After a minute, add tomato paste, and cashew butter.  Once cashew butter is softened and mixed in add the balance of ingredients.  Bring to boil and cook 15 minutes.  Serve over or along side basmati rice.
